Vegan Irish Soda Bread

Since we are out of eggs and its a blizzard out there I decided to improvise and make some Irish Soda bread with out eggs/milk. I used my Aunts recipe and tweeked it a bit.
Here it is !


Irish Soda Bread
3 cups self rising flour
4 tsp baking powder
1/4 tsp salt
1 cup raisins
3/4 cup sugar
2 eggless eggs (or real eggs)
1 cup milk of choice
caraway seeds

Method
soak raisins in hot water. Mix flour, baking powder, salt and raisins. Add caraway seeds, sugar, eggs and milk. grease loaf pan and bake at 375 for 45-50 minutes or tooth pick comes out clean.
Rub top with butter/margarine.

1 tbsp cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp xanthum gum
3 tbsps water
** This = one egg so you have to double the recipe :)
