Beautiful Sunday!

Wow what a great way to end the long weekend! It was a gorgeous day here at the Jersey Shore. I actually slept in until 8 this morning, got up and made some pumpkin coffee and tried to decide on breakfast. Microwaved eggwhites with a laughing cow garlic and herb cheese wedge was the winner with a morning star farms sausage link on the side. I also had a bite of Adam's very tasty pork roll egg and cheese on an English muffin. I was nice and full after all this and let it digest for a bit before I headed off to the gym to work off all of the weekends indulgences! I did about 2 miles on the treadmill and some weights. After that I went to my parents to drop off some of the apple cake I made, and some laundry ;) While there I snacked a tad too much even though I WAS NOT HUNGRY AT ALL!! Damn mindless eating! I know I ate a huge chocolate chip cookie and about 3 big handfuls of chocolate chex mix.

I came home and showered and got ready to go for a walk on the boardwalk with Adam. It was really nice out but windy, we walked the boardwalk then went onto the beach to walk alittle on the sand. I can't believe its November here and I was on the beach by the water with just a long sleeve shirt and cardigan! NUTS!!

Adam wanted a cheese steak for lunch (EVIL) so we stopped off and got him one and I picked up a Diet Stewart's Root Beer, I love their root beer so much! When we got home I wasn't too hungry after my little binge at the parents house so I had a bowl of Wegman's Oats and Honey with Almonds, some Kashi Go Lean Crunch, a banana, cinnamon and Unsweetened Vanilla Almond Breeze. I unfortunately couldn't say no when Adam let me have a few bites of that tasty sandwich too!! It had peppers, mushrooms, onions and tomato sauce. MMMM

It was then time to clean up the apartment a bit, and relax.. which is just what Sundays are for! I finished cutting out my things for the art project for tomorrow and whipped up some dinner. I made a ham steak with pineapple. All I do it pour the juice out of the can and warm the ham steak in it. I topped it with some pineapple slice and viola! I also made myself some baked sweet potato fries. I had more fries and 2 more bites of the ham since there was some leftover ;)

Dessert was another piece of the Hungry Girl Fudge. I NEED TO GET THIS STUFF OUT OF THE HOUSE!! hahah I'm off to finish watching the Nascar race with Adam and get comfy for the night. Hope everyone had a great weekend! See you tomorrow.

Wow 4 Day Weekends Even Go Too Fast!

Hi everybody!
Hope your having a great Sunday!
I'll do my quick recap of yesterdays eatings:
Breakfast before we left New Hope was a cup of coffee from the Inn and then we walked to Starbucks and I had the Perfect Oatmeal with dried fruit again. Once home and situated I had a bowl of plain Greek yogurt with pumpkin, honey nut cheerios and lots and lots of frozen berries. I also had a handful of peanuts after I was done with my yogurt. We ran out to some stores to stock up for the week and I picked up some allergy meds since they have been killing me this past week!
Before dinner I made up one of my
http://megeats.blogspot.com/2008/10/apple-crumble.html and it came out even better this time! I ofcourse ate lots of apple pieces while making this and some of the batter ;) YUM!
Dinner was a whole chicken we bought a Shoprite with a salad on the side and some potatoes, mushrooms, onions and peppers that Adam cooked up in foil in the oven with some woreshire sauce, butter and garlic. IT WAS GREAT! I ate this like someone was taking it from me even though I was pretty full from all the apples I had eaten ;)We went for a short walk up the street when the rain stopped and then came back and I did some stuff for work. I cut up 20 brown paper turkeys for work tomorrow! HAHA fun times! For dessert I had a huge piece of my pumpkin fudge and a couple bites of the apple crumble while cutting a piece for Adam. We then vegged for the rest of the night watching some tv :)

ITS MY FRIDAY!!

WOOHOO for teachers convention!! Even though I'm not going to AC I'm pretty happy :)
I didn't sleep too well last night and today I've felt like crap all day, I got up and had my usual bowl of cereal and my travel mug of coffee (coffee today was chocolate raspberry...MMM). Once I got to work though I felt HORRIBLE! My sinuses were killing me and I felt so nauseous. All I could think was NO I can't be getting sick I'm going away tomorrow, so I pushed through and made it through the day. Lunch was Whipped Cottage cheese and a huge apple which hit the spot, and about a half cup of honey nut cheerios. About an hour later I felt sick again :( One of my coworkers gave me some cristalized ginger to help and it did for a bit.
I then went to the gym and did about 35 minutes on the treadmill, I didn't go too fast since I was congested and a tad spacey. UGH
When I got home I snacked on a bunch of pineapple. I LOVE PINEAPPLE!!

For dinner I wanted something to make me feel better so I went the the health food store and picked up an vegan chicken salad sandwich that I had with some pickles, black olives, and some evil doritos.
After dinner we tried to go to walmart and target but Adam's car had some lights popping up on the dashboard so we had to turn around and come home :( So I had a piece of Low Fat fudge and a sour gummy worm, I figured since I felt yucky might as well eat what I want! hahha I just worked on some lesson plans and starting packing for New Hope PA tomorrow :)


I think I might take a benadryl and conk out for the night! I'll post my breakfast tomorrow morning but we plan on leaving around 1ish so I don't think I'll make a lunch post. I promise to have lots of pictures Saturday when I get back. See you in the morning!

ONE MORE DAY TO GO!!!

Hi There! I only have one more day until my "weekend" begins!! WOOHOOO I can't wait.
I woke up alittle before my alarm this morning so I just decided to get up and get going. I had my usual bowl of cereal with Unsweetened Vanilla Almond Breeze, banana and cinnamon. I also had my cup of coffee with me to take to work which I had a few sips of before I left ;)
I walked to work on this warm November morning and it was beautiful but at the day went on it got yucky and raw out :(

Lunch today was a yogurt and an apple with honey nut cheerios on the side. I also had an oreo type cookie with the kids at snack time. Damn that snack time!! hahah


I walked home and dragged my cold and cranky self to the gym, even though I had a nice little sinus headache working. Once I got to the gym and warmed up it finally went away though as I tried to find something on tv at the gym that wasn't talking about the election. I came home and relaxed for a bit and decided on an egg, bacon and cheese on an English muffin for dinner. I had no idea what to have and we don't have much since we are going away for Thurday-Saturday :) I had some peppers and those evil Doritos along with it. Adam and I ran out to do some errands and I came home and had a piece of my Hungry Girl fudge with some light chocolate syrup on it.... YUM YUM!
My tummy is not so happy right now so I'm trying to ignore it. I hope everyone had a great day! See you all tomorrow!

WOOHOO FOR EASY MONDAYS!!

Gotta love an easy Monday, I woke up starving made some cereal (Wegman's Oats and Honey with almonds, Kashi Go Lean Crunch, banana, cinnamon and Unsweetened Vanilla Almond Breeze). I also made a big old mug of coffee to bring with me on my walk to work. There were only 4 kids today in my class!! IT WAS AMAZING!! A wonderful way to start the week if you ask me. I only have 2 more days of work since Teacher's Convention is Thursday and Friday and Adam and I are taking our Annual fall trip to New Hope PA. I'm so exited, I love going there and look forward to it every fall. There are so many amazing restaurants to choose from, its pretty overwhelming but its something I can handle ;)
Lunch was a few bites of EVIL pumpkin cheesecake that one of my coworkers made, and an apple with cottage cheese and a handful of honey nut cheerios. YUM!

I got done at 3:30 and walked home to Adam making a big pot of chicken chili, the apartment smelled great! I was then off to the gym I did about 2 miles on the treadmill and some weights and came home. I talked to a friend for a bit after I got home who is going in for surgery tomorrow and then made a yummy dinner.

My stomach has been funny lately so I figured chili wouldn't be a good choice. I made an almond butter and jelly sandwich on Arnold Double Fiber bread with some pretzels and leftover red and green peppers on the side. (I ate a bunch of pretzels and peppers before I took the picture) I then laced up my new sneakers I got yesterday at the Outlets in the Poconos to go for a short walk on the boardwalk, its so mild and nice that we HAVE to take advantage of it :) I came home and decided to have a small piece of the Hungry Girl fudge I had made and it hit the spot. I'm now off to read some blogs and be lazy for the rest of the night.
