Wow 4 Day Weekends Even Go Too Fast!

Hi everybody!
Hope your having a great Sunday!
I'll do my quick recap of yesterdays eatings:
Breakfast before we left New Hope was a cup of coffee from the Inn and then we walked to Starbucks and I had the Perfect Oatmeal with dried fruit again. Once home and situated I had a bowl of plain Greek yogurt with pumpkin, honey nut cheerios and lots and lots of frozen berries. I also had a handful of peanuts after I was done with my yogurt. We ran out to some stores to stock up for the week and I picked up some allergy meds since they have been killing me this past week!

http://megeats.blogspot.com/2008/10/apple-crumble.html and it came out even better this time! I ofcourse ate lots of apple pieces while making this and some of the batter ;) YUM!
Dinner was a whole chicken we bought a Shoprite with a salad on the side and some potatoes, mushrooms, onions and peppers that Adam cooked up in foil in the oven with some woreshire sauce, butter and garlic. IT WAS GREAT! I ate this like someone was taking it from me even though I was pretty full from all the apples I had eaten ;)We went for a short walk up the street when the rain stopped and then came back and I did some stuff for work. I cut up 20 brown paper turkeys for work tomorrow! HAHA fun times! For dessert I had a huge piece of my pumpkin fudge and a couple bites of the apple crumble while cutting a piece for Adam. We then vegged for the rest of the night watching some tv :)

Hiya

Well I had another busy one today! Those kids are amped up I think the Halloween candy is seeping into their veins even though they haven't gotten it yet!

For breakfast this morning it was the usual wegmans oats and honey with strawberries cereal, fiber one, banana, cinnamon and skim milk. I also brought m travel mug of coffee with me :)

Lunch was a HUGE apple with cottage cheese and 2 chocolate chip cookies. MMM!

I walked home after work and had some walnuts before the gym. I did about 2 miles on the treadmill and some weights and came home.

I had leftver salmon and veggies with a few fries for dinner (I ate some of the salmon before I took the picture.. I was hungry), I also had a few bites of some vcon baked beans that I made a LONG TIME AGO that we defrosted. They were still awesome! (Adam had them with his dinner) We then were off to Old Navy where I got a Halloween shirt and a new sweater :-D We then went to Barnes and Nobles for our "Date" night, I had a diet rootbeer and a few bites of Adam's Peanutbutter cup cookie. We read some magazines and ended up buying the new Weird New Jersey. I love these magazines, its so much fun since I know where alot of the places are in it. It was then off to Walmart to pick up a few things and now we are home relaxing and watching tv. I had some of my apple crumble because I needed something sweet. (ok I really just wanted it!!) I'm hoping it doesn't rain tomorrow because my brother has a football game at 2 and Adam and are planned to go for a nice walk in the am.. but we will see.. If not I'll be going to the gym and doing laundry, and maybe some cleaning around the apt.

APPLE CRUMBLE

Here's the recipe for the Apple Cake I made tonight, I got the recipe from my MOM!! hahah oopps sorry mom :-D

1 box Yellow
cake mix ·
6 apples, 3 tart 3 sweet, peeled, cored and chopped
1 stick melted butter
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. pure vanilla extract
1/2 cup apple juice
· 1 1/2 cups quick oats
· 1/2 cup brown sugar or Splenda
· 1 can French Vanilla frosting
Directions:
1: In a large bowl mix all of the above ingredients, except frosting.

2: Butter a 9x13-inch pan.
3: Pour mixture into pan.
4: Bake in a pre-heated 350 F oven for 35-40 minutes.
5: Bake until golden brown and bubbly.
6: Melt frostring in microwave 10-15 seconds, stir to cool slightly.
7: Drizzle over apple crumble.

I only used 4 apples since all the apples we picked were huge! I also left off the icing because its sweet enough without it! :)
