Almost Time To Go!

Hi Guys!
I already packed my camera but I had the usual bowl of cereal with pumpkin spice coffee on the side. YUM! I also had to bite of Adam's evil but delish sausage, poached eggs, country gravy on english muffins. Way yummier than my breakfast.. hahah I packed and went to the gym since I know that even though we will be walking around alot but we also will be drinking and eating ALOT!! I did abour 4o minutes on the treadmill and some weights, I then met Adam at the car dealership since his car is on the fritz :( I came home ate a handful of peanuts (they were calling me) then got in the shower. I'm now being lazy and letting my hair air dry a bit before making myself beautiful and leaving :) Have a great couple days everyone! See you on Saturday :-D

ITS MY FRIDAY!!

WOOHOO for teachers convention!! Even though I'm not going to AC I'm pretty happy :)
I didn't sleep too well last night and today I've felt like crap all day, I got up and had my usual bowl of cereal and my travel mug of coffee (coffee today was chocolate raspberry...MMM). Once I got to work though I felt HORRIBLE! My sinuses were killing me and I felt so nauseous. All I could think was NO I can't be getting sick I'm going away tomorrow, so I pushed through and made it through the day. Lunch was Whipped Cottage cheese and a huge apple which hit the spot, and about a half cup of honey nut cheerios. About an hour later I felt sick again :( One of my coworkers gave me some cristalized ginger to help and it did for a bit.
I then went to the gym and did about 35 minutes on the treadmill, I didn't go too fast since I was congested and a tad spacey. UGH
When I got home I snacked on a bunch of pineapple. I LOVE PINEAPPLE!!

For dinner I wanted something to make me feel better so I went the the health food store and picked up an vegan chicken salad sandwich that I had with some pickles, black olives, and some evil doritos.
After dinner we tried to go to walmart and target but Adam's car had some lights popping up on the dashboard so we had to turn around and come home :( So I had a piece of Low Fat fudge and a sour gummy worm, I figured since I felt yucky might as well eat what I want! hahha I just worked on some lesson plans and starting packing for New Hope PA tomorrow :)


I think I might take a benadryl and conk out for the night! I'll post my breakfast tomorrow morning but we plan on leaving around 1ish so I don't think I'll make a lunch post. I promise to have lots of pictures Saturday when I get back. See you in the morning!

ONE MORE DAY TO GO!!!

Hi There! I only have one more day until my "weekend" begins!! WOOHOOO I can't wait.
I woke up alittle before my alarm this morning so I just decided to get up and get going. I had my usual bowl of cereal with Unsweetened Vanilla Almond Breeze, banana and cinnamon. I also had my cup of coffee with me to take to work which I had a few sips of before I left ;)
I walked to work on this warm November morning and it was beautiful but at the day went on it got yucky and raw out :(

Lunch today was a yogurt and an apple with honey nut cheerios on the side. I also had an oreo type cookie with the kids at snack time. Damn that snack time!! hahah


I walked home and dragged my cold and cranky self to the gym, even though I had a nice little sinus headache working. Once I got to the gym and warmed up it finally went away though as I tried to find something on tv at the gym that wasn't talking about the election. I came home and relaxed for a bit and decided on an egg, bacon and cheese on an English muffin for dinner. I had no idea what to have and we don't have much since we are going away for Thurday-Saturday :) I had some peppers and those evil Doritos along with it. Adam and I ran out to do some errands and I came home and had a piece of my Hungry Girl fudge with some light chocolate syrup on it.... YUM YUM!
My tummy is not so happy right now so I'm trying to ignore it. I hope everyone had a great day! See you all tomorrow!

WOOHOO FOR EASY MONDAYS!!

Gotta love an easy Monday, I woke up starving made some cereal (Wegman's Oats and Honey with almonds, Kashi Go Lean Crunch, banana, cinnamon and Unsweetened Vanilla Almond Breeze). I also made a big old mug of coffee to bring with me on my walk to work. There were only 4 kids today in my class!! IT WAS AMAZING!! A wonderful way to start the week if you ask me. I only have 2 more days of work since Teacher's Convention is Thursday and Friday and Adam and I are taking our Annual fall trip to New Hope PA. I'm so exited, I love going there and look forward to it every fall. There are so many amazing restaurants to choose from, its pretty overwhelming but its something I can handle ;)
Lunch was a few bites of EVIL pumpkin cheesecake that one of my coworkers made, and an apple with cottage cheese and a handful of honey nut cheerios. YUM!

I got done at 3:30 and walked home to Adam making a big pot of chicken chili, the apartment smelled great! I was then off to the gym I did about 2 miles on the treadmill and some weights and came home. I talked to a friend for a bit after I got home who is going in for surgery tomorrow and then made a yummy dinner.

My stomach has been funny lately so I figured chili wouldn't be a good choice. I made an almond butter and jelly sandwich on Arnold Double Fiber bread with some pretzels and leftover red and green peppers on the side. (I ate a bunch of pretzels and peppers before I took the picture) I then laced up my new sneakers I got yesterday at the Outlets in the Poconos to go for a short walk on the boardwalk, its so mild and nice that we HAVE to take advantage of it :) I came home and decided to have a small piece of the Hungry Girl fudge I had made and it hit the spot. I'm now off to read some blogs and be lazy for the rest of the night.

BUSY DAY OF SHOPPING IN THE POCONOS

Hey All !

Today was a fun filled day of shopping, we drove 2 hours each way to get there with beautiful sites. The leaves changing and the mountains :-D I'm now relaxing and watching some tv. I didn't remember to take any food pictures today but I'll leave you with one of the Water Gap :-D

We even saw hot air balloons on the way home! I had my brother who got the front seat of the Mustand on the way home to take this one ;) See you all tomorrow! Have a great night!!!

I Love Delicious Orchards!

Hi Everyone
After the gym I went home to the parents, ate way too much chex mix and was off to the library to get some books for the kids at school. I came home after finishing my laundry and showered, ate my leftover sub from last night with a few evil doritos that Adam bought and some of a pickle. (I ate some doritos before I took the picture) oh and I was too lazy to put in on a plate since it would just be another thing to wash!! So I just ate it in the container I had put it in last night ;)Adam and I then were off to Delicious Orchards in Colts Neck. I finally found some pumpkin butter without HFCS! It is fruitened with juice instead :-D woohooo. I also got a Jersey white sweet potato, Adam picked up some peppers for his chili he plans on making on Monday and some Apple Cider donuts for our ride to the Pocono Outlets tomorrow :) I tried the pumpkin butter right away when we got home and its AWESOME!! I had about 2 tablespoons.
I then set off to make my own apple butter with this recipe:
Makes 2 cups
ACTIVE TIME: 10 minutes
TOTAL TIME: 2 1/2 hours
EASE OF PREPARATION: Easy
8 medium McIntosh apples (2 3/4 pounds), peeled, cored and quartered2 cups unsweetened apple juice
1. Preheat oven to 450°F. Arrange apples in a large roasting pan. Pour apple juice over the apples. Bake until tender and lightly browned, about 30 minutes. Using a fork or potato masher, thoroughly mash the apples in the roasting pan. 2. Reduce oven temperature to 350°. Bake the apple puree, stirring occasionally, until very thick and deeply browned, 1 1/2 to 1 3/4 hours. Scrape into a bowl and let cool.
NUTRITION INFORMATION: Per tablespoon: 27 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 7 g carbohydrate; 0 g protein; 1 g fiber; 0 mg sodium.1/2 Carbohydrate Serving


Its in the oven right now so we will see how it comes out ;)

Dinner was an Oikos Vanilla Greek Yogurt with some pureed pumpkin, berries, and about 1/2 cup of honey nut cheerios. MMM This really hit the spot! I got all my "school" work done so I won't have to worry about rushing home tomorrow after our fun outting tomorrow. I think I may have a drink tonight, I feel very anxious for somer reason and think either a Blue Moon or a glass of wine might do the trick.. hehe I hope everyone has a wonderful night!

WOOHOO For Weekends!

Good Morning All!

Well another morning of waking up way too early! I was up before 6:30 again today, I stayed warm and toasty in bed until about 7:45 though when I decided I might as well get some cleaning done. Adam got up too and started on his big ol' breakfast he had planned out for this morning. I cleaned up a bit made some pumpkin spice coffee and hung out while Adam made his poached eggs with sausage/ sausage gravy on an english muffin. Let me tell you, I had a bite and it was AWESOME! I though kept in simple and had the same breakfast from yesterday and the day before that. Boring I know :-p I'm gonna be lazy for a bit then i'm off to the gym, the parent's house to do some laundry and the library to get some books for the kiddies.
