2 More Days Until My Weekend!!!

Oh how I love short weeks!!! :) I woke up this morning not too hungry.. I made up a bowl of oats (the usual) and forced myself to eat it up since I didn't know how the morning would be. I made a cup of coffee to bring with me on my walk. The morning flew by and it was pretty dark and dingy out so I walked home to pick up my car just in case in started to rain before I got out of work. Lunch was a pear with cottage cheese and some pretzels, I still wasn't hungry and it took me a while to eat it. ME NOT HUNGRY... WHAT IS GOING ON HERE?!?!?LOL After work I was off to the gym for a quick 2 miles on the treadmill and a run to Kmart to pick up something for a certain someone for VDAY :)

I came home and checked my email and showered then made up some Garlic Shells by Lipton. These were my absolute favorite growing up, def not healthy but brings back good memories which is all that matters to me ;) We also had dad's home made chicken cordon bleu which was AMAZING! I went back for a little of both after I finished what was on my plate ;) FYI I tore into before the pic because it was held together with toothpicks and we were trying to find em ;)We stopped by the rent's after dinner and went to pick up a few things at A&P since they had grapes on sale !!! 99 cents a pound!! We came home and I was craving nuts so I had a few walnuts and some lime jello and cool whip... mmm Now its time to watch American Idol and be lazy with my sweetie! Hope Ya'll had a great day! I will try to blog tomorrow but I have another class for my CEU's so we will see how exhausted I am when I get home ;) toodles tigers!

TGIT

Hola :)
Well yesterday was a very busy day, I had work, gym then a class at night for work. I got home around 9ish and relaxed for a bit. I'll do a quick recap of the foodage for ya ;)

breakfast was oatmeal (usual) I also brought hot chocolate since it was snowy and freezing!!! Lunch was Yoplait yogurt and an apple (my belly was miserable something is just not right with it!!) I snacked on a bunch of pretzels to try to settle it before the gym but no such luck! I did 2.25 miles on the treadmill and came home to shower and eat before class. I had some grapes and chex mix while toasting my bread for dinner. I had a cinnamon raisin PB and Jelly sammy on ww. I also had a few pita chips on the side, These Stacy's multi grain ones are GREAT! Then right next to the building where my class was was a Dunkin Donuts so I got a medium decaf hazelnut with skim milk and splenda. MMM Class was on Asthma in the classroom I need 8 CEU's a year. I've got 4 so far ;) When I got home I had to choc chip peanut butter cookies and pretty much passed out.


Onto today, After a great night of sleep I felt well rested but my stomach HATES ME!!! I had a bowl of Kashi Oat Flakes & Wild Blueberry Clusters with a banana, cinnamon and Silk Light Original. I also brought my mug o' coffee with me :)


Lunch was an apple with cottage cheese. I was feeling pretty crappy at lunch so I held off and ate at nap time. I went to the gym and did 30 minutes on the treadmill and some weights. I came home relaxed and got to make some 3 cheese tortellini and had the mediteranean pasta sauce my dad had made.. MMM I also had a salad on the side with some creamy italian dressing. After dinner and doing a few things I made Adam one of those microwave cakes that I make all the time. I tried to make it a bit healthier though and used 3 tbsp of applesauce instead of oil. Adam said he thought it tasted better than with the oil!! WOOOHOO I of course ate a few bites (maybe more than a few) haha and now I'm checking out some flower girl dresses online since we are going to Adam's brothers house Saturday to watch a car race and get haircuts! I will be trying out wedding hairstyles while the boys watch the race. I'm excited!!! Well I hope you all had a great Thursday and have an awesome Friday!!!

HAPPY LABOR DAY!




Hi everyone, lets see I quess I'll go back to breakfast and make my way up to now. Breakfast was the same as usual, I woke up at 7 this morning since we went to bed at 10:30 last night! I waited for Adam to get up before I ate to see what his plans were for breakfast. We both had cereal, Mine was the normal Fiber One, Kashi Go Lean Crunch LF soymilk and banana with coffee on the side. I then showered and we were off to the mall for some shopping! I had about 20 bux left on a macy's gift card so I figured I might as well use it up. I got 3 cookie sheets and a spatula for Adam. We then came home and was ready for some lunch! Adam picked up a tasty cheesesteak on the way home, and I had Chobani vanilla with berries and granola. I had a bite of his cheesesteak and some peanuts while getting stuff in the kitchen.

After we were done eating I got to cooking up a dinner that Adam enjoys. Its Chicken Pomodoro its so easy to make that it takes less than 10 minutes for the sauce, the longest part is waiting for the pasta to cook!

here's the recipe if you'd like to try it :)

Chicken Pomodoro


8 ounces whole-wheat spaghetti ( I used ww rotini)
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic
1/4 teaspoon crushed red pepper, or to taste
1 (28 ounce) can diced tomatoes
I use Perdue Chicken in the package that is already cooked (You can use as much as you like)
2 tablespoons thinly sliced fresh basil



Cooking Directions
Bring a large pot of water to a boil. Cook spaghetti, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain.
Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 1 minute. Add anchovies (if using) and crushed red pepper and cook for 30 seconds more. Add tomatoes, reduce heat to medium and cook, stirring occasionally, for 8 minutes. Stir in tuna and cook until it is incorporated into the sauce and heated through, 2 minutes more. Divide the spaghetti evenly among 4 plates, top with sauce and garnish with basil. Serve hot.
Yield: 4 servings
