Quick Tuesday!

Wow today totally flew by and I am not complaining at all!! I was dreading it since I got done with work at 3:30 but had a meeting at 4 :( Luckily it was quick and painless!!
Onto today's eats:
Breakfast was a bowl of oats (usual but with some Pure Protein in Chocolate) added in.. MMM chocolate in the morning!!! I also brought my mug of coffee on my walk with me. It was in the high 20's but I didn't know if I'd have the energy to head to the gym after my meeting so I figured any walking would be something. The morning flew by and before I knew it, it was lunch time! I walked home to pick up my car, get more coffee and snack on some grapes before I headed back and had some lunch. I had a yogurt with some of my granola and cantaloupe on the side. I also had a few bites of pizza since it was pizza day.. Oh how I love working with kids! hehe

After work I had a cookie and more cantaloupe on my way to the gym. I did a quick 2 miles while watching the end of Oprah and a bit of Tyra and came home to shower and inhale some din din :)

While getting my salad and sweet potato I had tons of grapes and some pretzels.. I had the same salad as a few night ago with a small piece of sweet potato and Newman's Own Salsa. MMM MM GOOD! For dessert I had a piece of chocolate (not pictured) and some apple with some PB2. I had mixed some of the pb up on Friday and tried it plain and wasn't thrilled.. I think my expectations were set a bit high from everyones blogs. I decided to try it again with an apple and really liked it this time!I think I'll be buying a 4 pack from their website. I just got off the phone with my cousin, we were talking about the wedding and about her baby shower! She is due in August. I'm off to watch some Real Housewives on NY and go to bed! Trying To Lay Low

Hiya
Ok here's today's fun filled day... Woke up around 8:15 which is totally sleeping in for me! I was very very excited, I stayed in bed until about 8:30 and got up to make some coffee and watch the news.. the news is so depressing, so needless to say I didn't keep it on very long.. lol

Breakfast was 1/2 cup eggbeaters with a Laughing Cow Cheese wedge and half a piece of Wegman's Country Oat bread with cottage cheese.. mmm oh and tons of ketchup for the eggs ;)

We went to both of our parents houses to pick up a few things then went to the dollar store, I needed an aluminum pan to cook a cake that I wanted to try out and we got the Sunday paper for $1, its usually 2 bux!! haha we are so thrifty. :-P

Since it was so beautiful out I decided to skip the gym and go to http://www.allairevillage.org/index.html Its so pretty here to walk around, it totally made my day to be outside in warmth! (its gonna get cold again tomorrow.. ugh!) We got home around 1:30ish and I made up some Chobani vanilla with frozen strawberries and blueberries and put some granola and golden grahams on it.. SO SO GOOD!

I then got to baking up a Weight Watchers cake recipe I had seen that I thought would be worth a shot..
all it is :

1 box cake mix
1 egg white
1 can diet cola
mix and put in a 9x12 inch pan and bake for about 45 minutes or until toothpick is clean.

This was so easy to bake and let me tell you it tastes GREAT! I kept some for us and gave the rest to the parents ;) While baking I ate some batter and tons of grapes to try and avoid the batter.. hahah that didn't work too well :-P

I vegged around getting things done for work, reading the paper and cutting out coupons... For dinner I had one of my frozen chickpea cutlets from Vcon with homemade honey mustard to dip it in and some more sweet potato with salsa.. MMMM

I then had some of the cake with frosting ofcourse.. I had cut it for Adam but had to steal some bites.. so no pic.. oopps.. I'll get one tomorrow for ya ;)

I'm off to watch the travel channel with my honey and relax before another fun filled week of work..

Busy Weekend ;-D

How's it going? Sorry I haven't been around It was a busy weekend and today I ran around in the morning and vegged out/baked this afternoon... Sometimes you just need to shut off the technology and enjoy quiet!

I start out with yesterday's eats..

After Friday night's fun of a jager shot before we left and 2.5 beers I was hurting a bit in the morning.. yes I am a LIGHTWEIGHT!!!!! hahah and a cheap date ;) Breakfast was Kashi Raisin Spice Heart to Heart oatmeal with a nice mug of coffee.. MMMI went to the gym to try and sweat out some of the beer and did a quick 2 miles (this was a tough 2 miles on 5 hours of sleep). I then went to my parents just to say hi and ended up baking up some brownies for them.. and eating lots of batter.. This can cure any hangover.. hahaha I came home showered and got ready for the fundraiser/chinese auction for Adam's cousins' cheering squad. Before leaving I had some lunch of Tuna with reduced fat mayo and red onion mixed in and half of a sweet potato with salsa... YUM YUM!!!
I had a diet coke once we got to the bar for the auction, since the thought of alcohol made me quesy.. We then decided to go out to dinner to the best pizza place at the Jersey Shore! http://www.peteandeldas.com/ We left around 5 to get there as soon as we could.. since the wait is usually INSANE! For the first time in a long time we only waited maybe 5 minutes and got a table!! We were very excited... Adam got a salad since he was hungry and I picked a bit on it until our delish pizza.. We got peppers/mushrooms on the whole pizza and Adam got sausage on his half too. I had 2 pieces and was SO FULL!! but oh man was it good and totally hit the spot :-D We then went and walked around Target and hit up Wegman's for some food for the week :) I came home and snacked on a brownie but forgot to take a picture... OOPPS haha

Another Day Over

Hi Everyone

Well we are one day closer to the weekend! Does anyone else find it bad that most people spend all week just waiting for the weekend? I really try not to, but I can't help it.. I've got to be more positive!

Onto this mornings eats! I woke up early since I've been drinking so much water lately :( potty was calling..ugh so I was up at 7 and read my email and made some breakfast. It was a bowl of oats (the normal ones) lol and brought a mug of coffee with me to energize! The morning flew by and before I knew it, it was lunch! I had cottage cheese with a pear and some pretzel rods.. I wanted something crunchy. I stomach is just not right still so I'm trying to eat light until it gets better. After work I went to the gym and did about 2 miles on the treadmill and some weights. I came home talked with Adam about our days and got in the shower.

Dinner for me was the other half of my sweet potato with Newman's Own Pineapple Salsa and a salad with onion, peppers, cucumbers, hummus and croutons with balsamic vinegar. I had to run out and pick up new books for the kids at the library and get some meds at the pharmacy. We came home and I had another brownie with frosting and some grapes.. lol not together!!! I'm off to watch the History Channel since they are talking about the Jersey Devil. Hope you all have a great night! See you tomorrow :-D

Is It a Full Moon???

Good Evening Chickies!

I woke up this morning not too hungry again since my belly is still messed up! I had some oats just to have something in me to take some cold meds for my head and because I knew it would be a busy morning at work. I walked there since it was somewhat warm and sunny, and brought a mug of coffee with me for some energy :) Well the kids were NUTS today.. I don't know what it was but I didn't like it at all. Lunch came finally and I was actually hungry for it, I had a Yoplait thick and creamy and a pear and grapes. This did the trick and made me happy, until snack time when I was putting out the cookies and caved.. ehheh

I walked home and got ready for the gym and snacked on a few peanuts and grapes before leaving. I did a little over 2 miles on the treadmill watching Oprah, Dr. Oz was on and it was pretty interesting! I wanted to watch more but my stomach was really hurting so I decided to leave before it got any worse.

I came home showered and set Adam up to finish the questionnaire for our wedding prep class. I settled on something light for dinner a half of sweet potato with some Newman's Own Salsa and a salad with hummus and some balsamic vinegar. This totally hit the spot! I also might have snacked on some leftover sweet potato fries that were in the fridge calling my name.. My friend called me after dinner to give me the run down for our Girl's Night Happy Hour on Friday night to see Daddypop at Bar A. I painted my toenails as I chatted then when I was done decided on a brownie with some frosting for dessert just because.. :-D Oh and this plate was for Adam and I.. I only had one brownie ;)

I'm off to veg and watch some tv with the sweetie! Hope you all had a wonderful day!!

ITS ALMOST FRIDAY!!!!!

HIYA!

I barely slept last night, but surprisingly I'm still kicking and its after 8! I woke up at 6 after finally falling asleep around 1:30ish. I got out of bed at 7 and checked my email and talked to my mom. I then made up a bowl of oats and some coffee for breakfast. I walked to work today since it was supposed to be toasty=50! It was a nice easy day in kiddies land at the morning flew by since we were outside for over a half hour. By lunch I wasn't very hungry but figured I might as well eat. I totally putzed out this morning (since I was on barely any sleep) and brought 1/2 a sweet potato instead of my cut up pear :( So lunch was the sweet potato and cottage cheese.. It tasted good but just wasn't what I wanted. At snacktime I had 3 handfuls of froot loops since I wasn't feeling too satified from lunch. I walked home after work to get ready for the gym and had about a cup of grapes since I was getting hungry!

I went to the gym and did 2 miles on the treadmill while reading a trashy mag and did some weights since my wrist is feeling a bit better :) I stopped off at the parents house quickly to pick up a few things and say hi. I came home showered and made up some din din. I didn't know what I was in the mood for, so after having 2 big forkfuls of cold baked ziti I decided on an Amy's burger with Laughing Cow Cheese, homemade ketchup which was very thick, some pickles and a few pita chips. Desert was a bowl of Cherry Jello and Cool Whip, I also may have had a chocolate chip cookie from mommy.. hehe I'm now sitting with Adam (he's doing good after his surgery! :-D) watching Survivor. I decided on going to Atlantic City with the girls this weekend so its should be a fun time! I plan on resting up good tomorrow for a LOOONG night Saturday ;)

I Love Saturdays!

I got so much done today!!! I woke up way too early this morning..BIG SHOCKER! I made a pot of coffee for Adam and I then had a bowl of Kashi Bluberry Oat Clusters with a banana and light vanilla soymilk. I also had a bite or 2 of Adam's sausage and eggs :) I got a couple things done and went to the gym. I did 2.5 miles and went to my parents to do my laundry, and bake a Duncun Hines Carrot Cake. I had way too much batter but boy was it yummy ;) I came home and put away all my laundry had a few walnuts and showered. I was feeling kinda yucky from all the batter so I just settled on a pear and cottage cheese to hopefully ease my belly.
I got my lesson plans done for this coming week and some other things and then we headed out to Target and Wegman's! My favorite things to do on the weekend.. haha I'm such a dork!I got some Jelly Belly Jelly Beans at Wegman's and snacked a on few in the car. They are my favorite jelly beans.. We finally came home around 6 and got to cooking.
I made a hamsteak cooked in pineapple juice. I had a sweet potato on the side with Newman's Pineapple salsa. YUMO! Since I was in the cooking mood I whipped up a lowfat baked ziti for tomorrow night too. I also made some tiramisu for Adam for dessert which I had one too many bites of (sorry no pic.. I was a piggy) We are now watching Goodfellas since I've never seen it! I hope everyone had a great day! see ya'll tomorrow.

Darn Alarm Clock!

I over slept today!!! I have not done that since High School! My alarm went off but I have it on radio and it wasn't coming in, so it wasn't making any noise. I woke up at 7:50 instead of 7:30 and flew out of my bed. I don't work well rushing at all, and all I could think of was I better have time to eat.. ahhah Thank goodness I did and I got to work on time! maybe even a bit early, damn I'm good. For breakfast I picked up a new bar that I've been meaning to try its a Gnu Fiber bar in chocolate and I was pleasantly surprised. It was really good, and I plan on buying more of these next time I see them in the store. Luckily the morning flew by and by lunch I was ready to relax for a bit. I had my orange and since I wasn't really hungry from my flippy belly I saved my yogurt for the kids nap time.

After work I went to the gym and did 2.25 miles on the treadmill and lifted. I came home and got situated and got in the shower. I had a handful of peanuts and some raisins when I came home since I was alittle hungry and didn't know when Adam was getting home tonight from work.
Adam had chili tonight so I decided to go easy on my belly since it was still funny from rushing this morning. I had a salad with some hummus on top and some Newman's Own Lighten Up Low Fat Sesame Ginger Dressing. I also had a half of a big sweet potato with Newman's Own Mango Salsa, it was a Newman's kinda night ;) We went to shop rite to do some food shopping since I had some coupons and they had some good deals. I came home with some weight watchers snacks to try since they were on sale and I had a coupon. I had the chocolate cake tonight, they are SMALL!!! At first they had an icky fake taste... then I heated it up and it tasted better. I also had a few peanut mm's after it. I got some stuff done for work=cutting out "Lincoln's hat" for the kiddies to paint tomorrow. I think it may be an early night tonight. Hope your Tuesday flew by as quickly as mine did! MMM Bison Steak

Well dinner turned out very yummy thanks to Adam! We had Bison steaks and I had a sweet potato with Newman's Own Mango Salsa. I also had some sauteed peppers and onions on the side. I also had a small glass of Pinot Grigio with din din :) We went out to the dumpster to toss a ton of garbage out and it is still warm! I love it, the rest of the week is supposed to be warm also :-D

Dessert was a chocolate from the box of chocolate I got from one of my kiddies on Friday for VDAY! I had a Almond Cream and boy was it AWESOME! I'm now watching Bridezillas before its bedtime. I hope everyone had a great Sunday and that the upcoming work week goes well. See ya'll tomorrow!

Some Relaxing And Some Cooking...

I ended up being lazy this afternoon and looking up wedding dresses online :-D I then got bored and made some chickpea cutlets from Vcon. I then layed down and watched more Married With Children until Adam got home from work. After he got out of the shower I got everything out to make these yummy burgers:

Apple Maple Turkey Burgers with Maple-Dijon Sauce

4 servings

For Maple-Dijon Sauce:
1/4 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons real maple syrup
For Burgers:
1 1/4 pounds ground turkey breast
1/4 cup real bacon bits
1/2 cup chunky applesauce
1 teaspoon poultry seasoning
2 tablespoons real maple syrup
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Hamburger Buns
Hamburger condiments
Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
For Maple-Dijon Sauce:
in a small bowl, stir to combine mayonnaise, Dijon mustard, and 2 tablespoons maple syrup; set aside.
For Turkey Burgers: In a medium bowl, mix together all ingredients for burgers. Wet hands to prevent sticking and shape into 4 patties.
Place burgers on hot oiled grill for 5 to 6 minutes per side or until done.
Serve on buns with traditional burger condiments and a dollop of maple-Dijon sauce.
Note - Indoor: Prepare burgers as directed. Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. When oil is hot add burgers and cook 5 to 7 minutes per side or until done.

I used chicken instead of turkey and left out the maple Dijon sauce, and the bacon bits on ours. I also had half a sweet potato and a couple of Adam's fries on the side. While cooking Adam and I split a Blue Moon Harvest Moon. YUM! YUM! This dinner totally hit the spot! After dinner we cleaned up and ran out to get some cake decorating frosting for Joe's cake tomorrow. We stopped by my parents house also to pick up the cake holder.When we got home Adam tried my cookies I made and of course I had a couple more. I need to get these out of the house, I'm glad it made a big batch or I would be baking more for NYE!!! HAHAH I'm going to watch some more tv and hope I can stay up as late as possible so I'm not up too early tomorrow, 8 was perfect this morning. I plan on a nice long walk on the treadmill tomorrow since its gonna be a birthday cake kinda night :-D

One More Day To Go!

Hiya All!
I hope you all had a great Monday! Mine wasn't too bad at all :-D For breakfast I had a bowl of oats with a banana, cinnamon, and some lf vanilla soy milk. I brought a mug of hot chocolate with me to work on this FREEZING day in Jersey! It was about 13 degrees, its just nuts!


On my lunch break I ran over to the insurance company to get everything settled and thank goodness that is DONE! I came back and inhaled my Dannon Light and Fit with 1/4 cup cheerios and some pineapple. I also had a chocolate covered pretzel at snack time with the kiddies.

After work I went and picked up my dad to go to Joe's bowling match, he kicked butt! I left a tad early and come home to have an almond butter and jelly sandwich on an Arnold Sandwich Thin, I also had a half of a sweet potato that I made in the microwave. When I was toasting my bread and cooking the potato I had about a cup of grapes. I then had one of the Double Chocolate Explosion Cookie Vive Le Vegan. YUM!! I'm now relaxing and catching up on my blogs.
So is everyone set for Christmas? I'm almost done! Just one more giftcard to go :-D

I Think I Need To Move Somewhere Warm!

Hello All!
This morning I had a nightmare :( I woke up around 4:30 and couldn't fall back to sleep for about 2 hours. GRRR! I can't remember what it was about but all I know is that I'm exhausted now. Breakfast was a bowl of oats with banana, light vanilla 8th continent and some free bear naked granola that I got in the mail. I also brought a mug of coffee with me on this FREEZING day!
My belly hasn't been feeling so good but I was starving for lunch so I had my yogurt and an apple. It was yummy but sat like a rock in my stomach, at snack time I really wanted something even though I know it would make me feel worse. I caved though and had 3 animals crackers with my kiddies. Right after work I went to my parents house to pick up my dad to go to the bowling alley for my brothers game. He did pretty well, he averaged a 197 for 3 games! I saw one of my old teachers and talked to him for a bit.
Once home and starving around 6 I had a Arnold's sandwich bread with almond butter and jelly, I also had a few pretzels and some of the huge sweet potato on the side with ketchup. MMM This hit the spot, For dessert after showering and cutting up a pineapple (which I of course had a few pieces of just to make sure it was sweet) I had a midnight milky way for alittle something something ;) My belly is still very angry with me, I'm hoping it feels better soon because I feel pretty darn S***Y!!!! UGH

Why Do The Weekends Fly By?

Hi There All! Boy am I full and sleepy. All I wanted to do was eat today, and eat I did. I'll start with breakfast, I had 1 egg white and 1 egg scrambled with some Kraft FF Cheddar Cheese and lots of ketchup. I also probably had about a pound of grapes while deciding on breakfast, I was STARVING this morning! Thanks to the shot and beer last night! AHAHI also had a mug of Holiday Spice coffee and a half a piece of whole wheat toast on the side.(I had started eating then realized I needed a picture!) I ran to my parents to drop some stuff off and ate a chocolate chip cookie that had just come out of the oven. MMMMM We went to Harry and David to pick up Adam's Dad a xmas present and walked around a bit. We were home early so I did some cleaning and baking! Lunch was a plain Chobani yogurt with frozen berries, and lots of Back to Nature granola (apple blueberry) I also had some of Adam's Wendy's french fries.. YUMMY! Then it was baking time! I made my mom's favorite peanut butter cookies:

1 box yellow cake mix
1/4
cup packed brown sugar
1/3
cup water
1
cup creamy peanut butter
1/4
cup shortening or vegetable oil

eggs
Granulated sugar
1.
Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, brown sugar, water, peanut butter, shortening and eggs with electric mixer on medium speed until smooth.

Shape dough into 1-inch balls. Roll in granulated sugar and, on ungreased cookie sheet, place 2 inches apart. Flatten in crisscross pattern with fork dipped in sugar.

Bake 10 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
High Altitude (3500-6500 ft): No change.

I also added semi sweet chocolate chips in since Adam thought it sounded good ;) Unfortunately I ate way too much cookie dough, so I'm not feeling too wonderful! That's what I get!! hahah


I got some work done for school and relaxed. Then decided on dinner, I had a big bowl of salad with tuna and Newman's Own Asian Sesame dressing. I also had some pieces of a sweet potato that I had microwaved (the thing was HUGE) and some reduced fat wheatables and pickle slices. So random I know!! HAHA I also ate 2 of those cookies I made!

Needless to say I'm very full and uncomfortable right now but I enjoyed every single bite ;)

I hope you all had a great weekend! See you tomorrow, its gonna be a late one for me since now its winter sports season and my brother is on the bowling team. This is one sport I totally understand (I was on the team in hs too I'm a big dork I know ) So I'll be running there right from work!

Its starting to feel like fall!

This is going to be a long post, I've got my whole day to recap! :)
for breakfast it was cereal (Kashi and Total) Banana and the last of my soymilk and some iced coffee. I was then off to walk to work on this beautiful day.

Lunch was the usual yogurt (Dannon light and fit) and cantalope(forgot a pic this morning), I also had a bag of these

Probably not the best thing for me but I was hungry on my walk back to the apartment before I left for the gym.

I did 2 miles on the treadmill and some upper body weights. I walked about a half mile from going back and forth to work today.

Dinner was some of the Ratatouille, half a sweet potato and a half can of tuna. This wasn't all mixed together (I forgot to take a picture since it was all random things I took out of the fridge and inhaled while listening to Adam about his day.

We then went to the Health Food store that I used to work at to get a veggie chicken salad sandwich for tomorrow, I have back to school night so I wanted something easy and this is my favorite! I also found THIS!!! I was so happy! I opened it right up in the parking lot to try it and wow was it GREAT! We then ran over to the bank and Foodtown to pick up a few things, I even saw one of my students who was very shocked to see the teacher not in school. I quess teachers never ever leave the classroom :-p

I'm now relaxing and eating a super charge me cookie and watching some tv.
