Can't Wait For Superbowl Commercials

Happy Sunday everyone!
So is everyone as excited for the commercials tonight as I am? And Bruce is doing the half time show :)

But onto the eats of yesterday... Went to the gym and did 2.5 miles on the treadmill then hit up the parents to do laundry and bake them some brownies (and eat way too much batter) :-D I then came home put all my shiznat away and showered and made up some yummy yogurt. I had a Fage 0% with strawberries and blueberries. I also mixed in a ton of Grape nuts for some tasty crunch. Once Adam was home we ran to the library to pick up books for work and to get my ring cleaned. ITS SO SHINY AGAIN :-D When we got back we snacked on some Herr's pretzels and relaxed and did some wedding stuff..

Then it was time to make the dinner, Sloppy Joe's made with that tasty sauce we get from http://www.suziehotsauce.com/ We also used 99% ff ground turkey in it. I made up some sweet potato fries also and put mine sloppyness on a sandwich thin and had a pickle with it. MMMM so so good!

We had our "date night" so we walked around the dollar store and then hit up Barnes and Nobles. I picked up a bunch of trashy magazines and a decaf coffee at starbucks. I also had 2 bites of Adam's Blueberry Scone. We came home and I tried to figure out our new dvd player. This took forever :( I might have had a twix while getting frustrated.. haha

This morning I woke up a tad before 8.. woohoooo I made up a bowl of oatmeal with banana, soy milk, cinnamon and grape nuts. I also snacked on some grapes while making it. I'm trying to lay off to coffee today since I have a sore throat and I feel like I've been drinking it too much lately.
Today I'm going to do some cleaning, hit up the gym, look at new cars and go food shopping before the game comes on. See ya later :-D

CARS STINK!

Hey All!
How was your day? Mine was rudely interrupted around 5:15 because my bladder was about to burst, unfortunately Adam was in the pottyroom getting ready for work. I finally jumped up and yelled to him to get out ASAP! I was floating.. hahahah It took along time to go back to sleep and then the alarm was going off before I knew it. Breakfast was another delish bowl of oats, same as yesterday I think I may be addicted. Not a bad thing to be addicted to I think?

I of course brought my mug of coffee with me and had a few cheerios at snack time with the kiddies. Lunch was a cup of Pacific Roasted Red Pepper and Tomato soup. MY FAVORITE!! I had some Wheatables on the side and some cantaloupe and honeydew. I had 2 of my kiddies go home sick today :( looks like a tummy virus is running around my classroom!! NOT GOOD AT ALL! I made an appointment for Saturday at David's Bridal and called about my car while the kids were napping. I found out that its the computer that's causing my cars problems and I have to take it to the dealer. Looks like an expensive problem!!! At afternoon snack I had a couple handfuls of Froot Loops and a cup of peppermint tea. I was then off to the gym and did 35 minutes on the treadmill while watching wife swap. I came home and picked up Adam and picked up my car after shelling out 100 bux or them to tell me they couldn't fix it :( UGH

We decided to lay low tonight and relax (not that I relaxed at all!) My stomach isn't feeling too swift so I just had a Chobani Vanilla with lots of frozen berries with a bunch of Honey Nut Cheerios. I also had a couple of handfuls of grapes while trying to figure out what the feed my face with!!! I also had a few olives and pretzels too, I was craving something salty after that sweet dinner. I figured since I was going to be home I'd bake Adam some cookies Double Chocolate Pecan Chippers from The Everyday Vegan. I tried one and boy were they good! Adam liked them too. After cleaning up the kitchen I noticed a "smell" near the garbage, I have no idea what it was but needless to say a trip to the dumpster later. I have the garbage can soaking with bleach in the shower overnight. That made me start cleaning out drawers in the kitchen, so needless to say I just sat down to relax around 9ish. Only 2 more days to go and then its girls night out Friday for Happy Hour and to see the band playing our wedding :-D

Another Fun Filled Day of Baking :-D

Happy Tuesday Everyone!!

I had my list ready for things to get done today, so I was up and at em by 8. I got all the ingrediants out for my brother's birthday cake. I made up some coffee too, while I was getting things ready. I decided I wasn't hungry for breakfast yet so I enjoyed some coffee and then got to baking.I used this recipe :
HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake Ingredients:
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Directions:1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans. 2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans. 3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings. VARIATIONS:ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost. BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.

I then had an apple with cottage cheese for breakfast and some peanuts after I was done with that. (The picture of the cottage cheese came out horrible) Once I got the cake out of the pans I went to the gym and did 3 miles the fastest I have ever done before :-D I'm not a runner so I just walk as fast as I can. I did it in about 41 minutes and I had the incline up to about 11 & the whole time. I was pretty happy!

I came home and got to frosting the cake and figuring out what I was going to have for lunch. After finishing up the cake and cleaning up I dragged my stinky butt into the shower and cleaned up the linen closet. Lunch was a Vanilla Chobani with tons of berries and lots of Honey Bunches of Oats. MMMM Then I wanted something even sweeter, hahah so I had 2 more of those darn mm cookies. I got the apartment vacuumed and now I'm relaxing for a bit. I am going to my parents around 5:30 for dinner and cake for Joe's BIG 18th!! I'll be back tonight to show ya the tasty eats :-D

Good Day Goes Bad!

Hi All

So today started off on a good foot! I slept well with the help of some Tylenol pm ( I had a headache that would not go away last night!) I woke up at 8:30 and decided to skip the gym today since I had gone everyday since last Sunday :) I had some cereal (the usual mix) and coffee and vacuumed. I showered and was off to my parents to do some laundry and hang out. I came home around one after a little snacking on grapes and a piece of dad's famous candies. I unpacked the laundry and made up some Chobani Vanilla with frozen berries and Back To Nature Blueberry Apple Granola. YUM!!! I also may or may not have had another chocolate ;) I was then off for my massage... It was AWESOME and much needed, now if they weren't 70 bux I would get them more often!!!

Here's where it goes bad :(

I came home and was thinking I hadn't had not gotten a bill for my car insurance so I find an old bill and call... To find out it was cancelled!!!!!!!!!!!!!WTF?!?!?! Then I realized it would have been due the end of November! I have been mailing it in since I moved marking the moved box for my change of address.. and they never changed it.. Well I never got my bill and that means no driving my car for me :( I'm very very angry now! So much for my relaxation! UGH!! Needless to say since I'm a spaz I've been crying and complaining. Adam thinks I'm nuts and told me not to worry.. but I'm so good with paying bills and all of that.. I'm always super early.. so it just gets me upset. Even though it wasn't my fault. I'm now sitting around being cranky.. Maybe I'll bake alittle.. I do know that we will be going out to look at Christmas lights tonight!! I think I'll stop at 7-11 and pick up a coffee.. That should make me happy :-D Hope your having a great Saturday!

Why Do The Weekends Fly By?

Hi There All! Boy am I full and sleepy. All I wanted to do was eat today, and eat I did. I'll start with breakfast, I had 1 egg white and 1 egg scrambled with some Kraft FF Cheddar Cheese and lots of ketchup. I also probably had about a pound of grapes while deciding on breakfast, I was STARVING this morning! Thanks to the shot and beer last night! AHAHI also had a mug of Holiday Spice coffee and a half a piece of whole wheat toast on the side.(I had started eating then realized I needed a picture!) I ran to my parents to drop some stuff off and ate a chocolate chip cookie that had just come out of the oven. MMMMM We went to Harry and David to pick up Adam's Dad a xmas present and walked around a bit. We were home early so I did some cleaning and baking! Lunch was a plain Chobani yogurt with frozen berries, and lots of Back to Nature granola (apple blueberry) I also had some of Adam's Wendy's french fries.. YUMMY! Then it was baking time! I made my mom's favorite peanut butter cookies:

1 box yellow cake mix
1/4
cup packed brown sugar
1/3
cup water
1
cup creamy peanut butter
1/4
cup shortening or vegetable oil
2
eggs
Granulated sugar
1.
Heat oven to 375°F (350°F for dark or nonstick cookie sheets). In large bowl, beat cake mix, brown sugar, water, peanut butter, shortening and eggs with electric mixer on medium speed until smooth.
2.
Shape dough into 1-inch balls. Roll in granulated sugar and, on ungreased cookie sheet, place 2 inches apart. Flatten in crisscross pattern with fork dipped in sugar.
3.
Bake 10 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheet to cooling rack.
High Altitude (3500-6500 ft): No change.

I also added semi sweet chocolate chips in since Adam thought it sounded good ;) Unfortunately I ate way too much cookie dough, so I'm not feeling too wonderful! That's what I get!! hahah


I got some work done for school and relaxed. Then decided on dinner, I had a big bowl of salad with tuna and Newman's Own Asian Sesame dressing. I also had some pieces of a sweet potato that I had microwaved (the thing was HUGE) and some reduced fat wheatables and pickle slices. So random I know!! HAHA I also ate 2 of those cookies I made!

Needless to say I'm very full and uncomfortable right now but I enjoyed every single bite ;)

I hope you all had a great weekend! See you tomorrow, its gonna be a late one for me since now its winter sports season and my brother is on the bowling team. This is one sport I totally understand (I was on the team in hs too I'm a big dork I know ) So I'll be running there right from work!

Rainy Sunday

Hi There
I was lucky to be able to sleep in until 8 today! I was so excited!!!! I woke up and relaxed for a bit before making coffee and some breakfast. I made some pumpkin spice coffee and French Toast waffles that I got from http://www.seebriderun.com/ They were AWESOME! Adam and I both loved them, I made mine with Aunt Jamima Low Fat Waffles, 2 eggs, skim milk, vanilla and cinnamon. These bad boys kept me full for almost 5 hours!!

After breakfast we ran to school so I could get my bulletin boards done, I needed Adam's tallness to help with the boarders ;) We then went to the new Christmas Tree Shoppe that opened near us. We got some cute things there but it was PACKED since its a rainy Sunday 25 days before Christmas! We then went to Costco to pick up a couple things, Adam got a hot dog and I had one bite since it looked so good, so good but oh so bad ;) ahha just kidding. We also bought a new camera. The one I've been using is from Adam and my first Christmas together which will be 4 years ago. So we got a Nikon Cool Pix, The battery is charging right now so I'll let ya know how it works :-D

Lunch was Stony field Farms nonfat plain yogurt with frozen berries and Honey Bunches of Oats. I also had 4 forkfuls of leftover yummy apple pie, I can't wait for all of this Thanksgiving food to be gone!!!

Holy Wind Batman!!

The wind kept me up all night last night :( I was so tired and went to bed early, but the wind was so strong it woke me up a million times. I finally got up around 8:30 and made some pumpkin spice coffee and waited for Adam to get up. I had a Pepperidge Farm Fruit and Grain bagel with Friendship Whipped Cottage cheese on it. I also ate a half of a banana while it was toasting (no pic). Around 10:30 I decided on going to the gym and did about 2 miles on about a 12% incline while reading the new People Magazine. I also did some weights for my arms and back while there. I came home and got ready to go to the new Outlets that opened near our house. Before we left I had a handful of peanuts since I have been starving for some reason (I'm thinking hormone related!!) Once we got close though the traffic started to back up. Adam thought maybe the traffic lights were out but I knew its because of the outlets and I was right!!! IT WAS CRAZY!!! We sat in traffic for 10 minutes and drove right by and went to Walmart instead. I was disappointed but oh well, we definitely spent less money at Walmart than we would have at the outlets ;)
We stopped at A&P for Adam to pick up some fried chicken that he wanted for lunch and came home. He got some tasty but evil fries too so of course I ate one too many of those along with a big bowl of Oikos vanilla Greek yogurt with the end of my can of pumpkin, tons of frozen berries, and honey nut cheerios. YUM YUM!

We pretty much sat around all day and I made some Vcon's Snobby Joe's to have for dinner on Tuesday night, since we are taking the parents out to dinner tomorrow night for a football fundraiser for my brother's high school.

Dinner was my leftover pizza from a few nights ago and the rest of my salad from Friday, with some ff ranch dressing. This dinner was great and hit the spot! Of course dessert was a Super Charge Me Cookie with a glass of 8th Continent Vanilla Light Soy milk. We are now watching Bridezillas and I'm looking up some ideas for some more turkey day projects for my kiddies to do!

I Love Delicious Orchards!

Hi Everyone
After the gym I went home to the parents, ate way too much chex mix and was off to the library to get some books for the kids at school. I came home after finishing my laundry and showered, ate my leftover sub from last night with a few evil doritos that Adam bought and some of a pickle. (I ate some doritos before I took the picture) oh and I was too lazy to put in on a plate since it would just be another thing to wash!! So I just ate it in the container I had put it in last night ;)Adam and I then were off to Delicious Orchards in Colts Neck. I finally found some pumpkin butter without HFCS! It is fruitened with juice instead :-D woohooo. I also got a Jersey white sweet potato, Adam picked up some peppers for his chili he plans on making on Monday and some Apple Cider donuts for our ride to the Pocono Outlets tomorrow :) I tried the pumpkin butter right away when we got home and its AWESOME!! I had about 2 tablespoons.
I then set off to make my own apple butter with this recipe:
Makes 2 cups
ACTIVE TIME: 10 minutes
TOTAL TIME: 2 1/2 hours
EASE OF PREPARATION: Easy
8 medium McIntosh apples (2 3/4 pounds), peeled, cored and quartered2 cups unsweetened apple juice
1. Preheat oven to 450°F. Arrange apples in a large roasting pan. Pour apple juice over the apples. Bake until tender and lightly browned, about 30 minutes. Using a fork or potato masher, thoroughly mash the apples in the roasting pan. 2. Reduce oven temperature to 350°. Bake the apple puree, stirring occasionally, until very thick and deeply browned, 1 1/2 to 1 3/4 hours. Scrape into a bowl and let cool.
NUTRITION INFORMATION: Per tablespoon: 27 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 7 g carbohydrate; 0 g protein; 1 g fiber; 0 mg sodium.1/2 Carbohydrate Serving


Its in the oven right now so we will see how it comes out ;)

Dinner was an Oikos Vanilla Greek Yogurt with some pureed pumpkin, berries, and about 1/2 cup of honey nut cheerios. MMM This really hit the spot! I got all my "school" work done so I won't have to worry about rushing home tomorrow after our fun outting tomorrow. I think I may have a drink tonight, I feel very anxious for somer reason and think either a Blue Moon or a glass of wine might do the trick.. hehe I hope everyone has a wonderful night!

The Weekends Go By Way Too Fast!

Good Evening :)
I think we need to add one more day to our weekends what does everyone think?!?!? lol This afternoon I did some cleaning and finally dragged the sleepy head out of bed around 12:30. We headed off to the supermarket and then came home and had some lunch. I had some Chobani plain greek yogurt with berries and honeynut cheerios. I also had a bite of Adam's bacon cheeseburger and a few fries. Grease is good for a hangover right? ;) It was then time to go for a walk on the boardwalk since it was an AMAZING fall day at the Shore! It was breezy but nice and warm in the sun, and there were so many people up at the boardwalk. I love it! We stopped off at Adam's moms house to do a few things for her, I helped her upload some pictures onto her computer then we came home to relax. This is what Adam wanted to do all day.. but I'm evil and made him go out ;) When we got back I was munchie so I had a handful of peanuts to hold me over for dinner time.
Dinner ended up being a Lean Cuisine Mediterrean Chicken dinner, I added some more tomato sauce and some parmasean cheese to kick it up a bit. I bought a pineapple today so I cut that up and ofcourse had to have some. It was so sweet and juicy, MMMMM. I finished all my stuff for work tomorrow so its now time to enjoy some tv and pass out as early as possible. Hope you all had a wonderful weekend, see you tomorrow!

I'm a Slacker!

Hi Everyone!
Lets see.. today I was up bright and early as usual, made some coffee and had a bowl of the Wegmans Oats and Honey with Strawberry cereal, some Kashi Go Lean Crunch, a banana, cinnamon and Unsweetened Almond milk. I also had a tasty bite of Adam's porkroll egg and cheese sammy.. I'm so glad he doesn't mind sharing :-D We then went for a stroll over to the supermarket to pick up meds and some food. We also stopped at the party store for me to get a cowboy hat and guns/holster for tonights outting.

I then came home got my stuff together and went over to the parents house to do laundry before my brothers football game. I had lunch while I was there and some snacks that I really didn't need. (I had my camera but was being a piggy and completely forgot to take pictures.. ugh) I had a half a piece of the best crumb cake that my mom bought from a fundraiser at her work. I then had some Chobani plain greek yogurt with tons of frozen berries and some golden grahams. mmm this was extremely tasty!!! I was so full from the coffee cake but ate it anyway because I knew I wouldn't be home until almost 5 from the game. I got back home soaked :( got into some comfy pants and put away all my nice and clean laundry.

I am now gonna relax before we make some dinner and I have to get ready for Girl's Night Out!! We are going to Martell's Tiki Bar in Point Pleasant for their halloween party since the band we are friend's with is playing. I decided on being a cow girl since that is what my other friends are going as and it was easy ;) Maybe I'll have some fun pictures for you tomorrow morning :-D

So So Sleepy!

Ok so I know I didn't do that much today but I did do alot of driving and I'm exhausted!! Adam and I went down to The Breakers and put down our second deposit, we tried to walk up by the beach but it was WINDY and COLD. I was bundled but Adam wasn't so we walked around the block and ended up going and buying me some hair dye! :) I am going red for the fall its a wash out... I'm scared of anything that I have to keep up on, like my roots! I'm excited to do it, I can use alittle change. I started getting hungry for dinner around 6ish which surprised me since I ate so much so late, but oh well. I had a bowl of Chobani plain greek yogurt with Fiber One and lots of frozen berries. I also had a big old spoonful of peanut butter for some more protein and yummyness. For dessert I made some general foods international mayan chocolate drink but wasn't that impressed :( I thought I put enough in.. oh well.. I drank most of it and was pretty full so I tossed the rest. I then got a phone call from my friend Kelli that we got tickets to see our favorite bar band play next weekend at http://www.tikibar.com/ its their Halloween party so I have to figure out what to be. Any Ideas?!?!? please help!! haha my friends are being cowgirls.. but I dunno... Have a great night and see everyone tomorrow :-D
and here are some pictures that should up on my camera.. Adam enjoys cooking and likes for me to show everyone what he is making :) Today while I was reliving my college days he was home sweating over a hot stove making some veggie chili! It is great and quite spicy :)

WOOHOO Going Food Shopping :)

Yes I am such a dork, food shopping is my favorite time of the week. Since Adam is on his way home from lunch with his dad and friend I thought I'd type up my lunch post quick before we are off to Target and Wegmans. I finally dragged my butt to the gym and did about 2.25 miles on the treadmill, I really don't want to push it since my breathing isn't great. DAMN ALLERGIES! I think I might have to cave in and go to the doc if it doesn't get better. I hate meds but if it helps me breath I guess it is a good thing :-p
Lunch was a handful of nuts inhaled after the gym since I'm a piggy! I then had a plain Oikos with a ton of frozen berries and about a 1/2 cup of Fiber One. I also added some vanilla extract for even more flavor. MMM I then saw an open bag of pretzels Adam must have busted out last night while I was gone so I had a few of them also.

After shopping we are coming home dropping it all off then we are going to my parents house for dinner. Adam and my dad love prime rib, we usually have it for Christmas dinner but it was on sale and since daddy now has found a lover of prime rib he bought it. I'm not really a fan but will have a few bites and whatever else they are having with it. Mom said we have salad fixing there so if all else fails I can whip up a salad. She also got cupcakes from Stop and Shop so at least I know I can have my sugar fix ;) See you after dinner!!

GOOD MORNING

Happy Sunday Everyone :)
Well as usual I was up bright and early this morning! 6:30 to be exact, why oh why can't I sleep in on the weekends? I stayed in bed til after 8 and got up and made some coffee for Adam and I. He got started on his breakfast, and I decided on some Oikos plain Greek yogurt with berries and granola. It really hit the spot this morning and filled me up but of course I had to try Adam's scrambled eggs with onions, red peppers and some Canadian bacon. I then whipped up some apple muffins from the millions of pounds that we have sitting in our living room :-p I wish I could give out the delicious recipe but I got it from some one's blog and can't remember who :( If anyone reads this and remembers making these last week let me know so I can give you some credit for AWESOME muffins :-D

We are off for a busy day of shopping and a nice walk on the boardwalk, see you later for lunch!

Rain Rain Go Away

Another rainy day here at the Jersey Shore, when is it going to stop?For breakfast today I had a bowl of Special K Vanilla Almond with a banana, cinnamon and LF vanilla soymilk. I ofcourse had my trusty coffee with french vanilla creamer and some splenda.
I made it to the gym and my parents before it started thank goodness ;) At the gym I did about 41 minutes on the treadmill while listening to my Ipod. I also did some lifting today since I finally wasn't in a rush to get home :-D It was a good workout. when I got to the parent's house to do my laundry the rain started on it merry way. I got all the laundry done, came home and put it away then had a yummy bowl of Chobani Vanilla greek yogurt with frozen berries and some of my homemade granola bars that I defrosted. YUM! This has got to be my most favoritist (haha I know its not a word) lunch! I also had a HUGE spoonful of cinnamon raisin peanut butter. Gosh I love this stuff, rainy days just make me want to eat. The cantalope I bought a few days ago was nice and ready to be cut up so I did that and tried a few bites, it is so sweet and tasty. When I was cleaning up the nice little mess I made from that I noticed something, a ANT!!!!!!!! I had a HUGE outbreak of them last year 2x and it was horrible!! They were coming out of the carpet and were in all my cabinets. I was so upset, we had set up ant traps and everything and nothing seemed to help. Finally I got the Super to come and he sprayed and had the exterminator come too. They finally went away, so needless to say I'm off to Jiffy Lube for an oil change and to the supermarket once again for some ant traps. Lets hope this works!

Date Night at Barnes and Nobles

Yes we are DORKS! First off I will fill you in on dinner, I was feeling kinda icky from the sun so I kept it light. I had a Fage 0% with tons of frozen berries and a half cup mix of Total and Kashi Go Lean Crunch (I mixed them together b/c they were both almost done) Adam made meatballs and pasta, which was amazing! I ofcourse had to try a bite, I did realize that I don't really enjoy non-whole wheat pasta anymore! But boy were those meatballs tasty, since I don't eat red meat often! It was only one bite but it made me very happy! We were then off for a nice walk on the boardwalk, it was nice and cool perfect walking weather! The waves were pretty rough and the surfers looked like they were in heaven. We then were on our way to B&N, for some light reading and a cup of something. I picked a bunch of trashy mags and a Weird NJ to look at with a bottle of IBC diet rootbeer (I had a craving) The place was PACKED! I guess our great idea of date night at B&N was also a ton of other peoples too! we found couple of chairs and plopped down. I scanned my magazines and had a bite of Adam's peanut butter cup cookie MMMM. Around 9 I couldn't keep my eyes open so we packed up and bought the Weird NJ and a Carribean one that Adam was looking at and came home. Once I was home I finally started to get hungry. My stomach gets so weird from sun/heat. I had some pineapple and peanuts so I didn't go to bed hungry. It was perfect but ofcourse I inhaled it before I got to the camera :-P
I hope everyone had a great Saturday and I'll be back alittle later for breakfast hopefully!! Since we have 3 appointments for Reception sites today!!!!!!!!!!!!!!!!! :-D

HMMM What to Eat?

Adam finally woke up around 8:15, I'm so bad since I was up at 7!! hahah I made some coffee and sat and thought about what to eat. We are going to Monmouth Racetrack for his company's Day at the Races. They rent out a bbq space there and its a family fun day, I don't plan on eating or drinking there so I wanted to have something healthy and filling for breakfast. I decided on Chobani vanilla yogurt with lots of berries and some granola, not exactly what I wanted but there was nothing that jumped out at me!
Adam and I then sat and made up the "Big" list of things for him to bring over today. The move in is happening! I'm such a spaz but its and exciting thing for me, even though we are already engaged I just think living together really is the best "test" to see if it will work. He already knows I'm a clean freak so hopefully it won't be too bad ;) I've already vacuumed and (dusted just the living room since it was at 7:30 when he was still sleeping) I'm now looking some things up for work and then have to drag my butt in the shower to get ready since we are leaving at 11:30. Lets hope we win big today!!!! Oh and I plan on bringing a Genisoy bar with me to the race for when I get hungy.

HAPPY LABOR DAY!




Hi everyone, lets see I quess I'll go back to breakfast and make my way up to now. Breakfast was the same as usual, I woke up at 7 this morning since we went to bed at 10:30 last night! I waited for Adam to get up before I ate to see what his plans were for breakfast. We both had cereal, Mine was the normal Fiber One, Kashi Go Lean Crunch LF soymilk and banana with coffee on the side. I then showered and we were off to the mall for some shopping! I had about 20 bux left on a macy's gift card so I figured I might as well use it up. I got 3 cookie sheets and a spatula for Adam. We then came home and was ready for some lunch! Adam picked up a tasty cheesesteak on the way home, and I had Chobani vanilla with berries and granola. I had a bite of his cheesesteak and some peanuts while getting stuff in the kitchen.

After we were done eating I got to cooking up a dinner that Adam enjoys. Its Chicken Pomodoro its so easy to make that it takes less than 10 minutes for the sauce, the longest part is waiting for the pasta to cook!

here's the recipe if you'd like to try it :)

Chicken Pomodoro


8 ounces whole-wheat spaghetti ( I used ww rotini)
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic
1/4 teaspoon crushed red pepper, or to taste
1 (28 ounce) can diced tomatoes
I use Perdue Chicken in the package that is already cooked (You can use as much as you like)
2 tablespoons thinly sliced fresh basil



Cooking Directions
Bring a large pot of water to a boil. Cook spaghetti, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain.
Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 1 minute. Add anchovies (if using) and crushed red pepper and cook for 30 seconds more. Add tomatoes, reduce heat to medium and cook, stirring occasionally, for 8 minutes. Stir in tuna and cook until it is incorporated into the sauce and heated through, 2 minutes more. Divide the spaghetti evenly among 4 plates, top with sauce and garnish with basil. Serve hot.
Yield: 4 servings
