APPLE CRUMBLE

Here's the recipe for the Apple Cake I made tonight, I got the recipe from my MOM!! hahah oopps sorry mom :-D

1 box Yellow
cake mix ·
6 apples, 3 tart 3 sweet, peeled, cored and chopped
1 stick melted butter
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. pure vanilla extract
1/2 cup apple juice
· 1 1/2 cups quick oats
· 1/2 cup brown sugar or Splenda
· 1 can French Vanilla frosting
Directions:
1: In a large bowl mix all of the above ingredients, except frosting.

2: Butter a 9x13-inch pan.
3: Pour mixture into pan.
4: Bake in a pre-heated 350 F oven for 35-40 minutes.
5: Bake until golden brown and bubbly.
6: Melt frostring in microwave 10-15 seconds, stir to cool slightly.
7: Drizzle over apple crumble.

I only used 4 apples since all the apples we picked were huge! I also left off the icing because its sweet enough without it! :)

WILD TUESDAY!

Hello All!
Today was nuts! Too many little ones and not enough grown ups makes for a tough day! To start out I had a bowl of Kashi Go Lean Crunch and Fiber One with banana, cinnamon, and Unsweetened Vanilla Almond Breeze. I also brought a big old mug of hot chocolate to keep me warm on my walk this cold morning. Up until lunch I was running around like a chicken with its head cut off, it was NUTS! I wasn't really hungry for lunch but knew the afternoon was going to be crazy too so I stayed and ate my Yoplait yogurt and apple (which I forgot to picture). I also had 2 chocolate chip cookies at snack time since I was frustrated. I walked home and had some walnuts and got ready for the gym. I went and did alittle over 2 miles and came home to get started on an apple cakeish dessert for Adam. I wish I remember where I had gotten the recipe from to post it but I'd want to give credit where credit is due. If I figure out where I got it from I'll post it because it came out GREAT!

I wasn't too hungry for dinner since I ate tons of the apples I was cutting up and some of the darn cake batter. Its just too tempting even though I wasn't hungry.. hahah

For dinner I heated a frozen Weight Watchers mac and cheese that has been in the freezer forever! I had some leftover tuna salad that I mixed in with it. It actually hit the spot even though it wasn't anything great at all. I think I just wanted something warm and comforting.

I was then off to the library to get some books for the kiddies and came back to cut up the cake to give away. We are keeping a few slices and I'm giving some to Adam's mom and my family. GOTTA KEEP THE SWEETS AWAY!!!!!
