Quick Chocolate Chip Cookies
Cookie baking with Bisquick® mix eliminates the additional measuring that comes with scratch baking.
Prep Time:1 hr 20 min
Start to Finish:1 hr 20 min
Makes:About 4 1/2 dozen cookies

cup butter or margarine, softened
1
cup packed brown sugar
2
teaspoons vanilla
1
egg
2 3/4
cups Original Bisquick® mix
1
cup semisweet chocolate chips (6 oz)
1/2
cup chopped nuts, if desired

Heat oven to 375°F. In large bowl, mix butter, brown sugar, vanilla and egg. Stir in Bisquick mix, chocolate chips and nuts.

Onto ungreased cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart; flatten slightly.
3.
Bake about 10 minutes or until golden brown. Remove from cookie sheet to cooling rack.
High Altitude (3500-6500 ft): Heat oven to 400°F.

I left out the nuts and used m&ms instead of chocolate chips since I had an evil bag of them taunting me ;)
I scrubbed the shower and got my tiny hiney off to the gym :-p I watched Rachel Ray and switched over to Married With Children (I love this show!!) during commericals. I did about 2.5 miles and then did some weights. I came home and putzed around then got in the shower, I love being able to have no time constraints! I tried to figure out what I wanted for lunch and decided on tuna with some mayo and celery on a ww English muffin with a pickle. My favorite lunch ever!! I then had to try out my cookies.. to make sure no one gets sick on NYE of course ;) I had 2 and then was in the mode of eating crap so I had 5 chocolate covered peanuts. I have now "shut" the kitchen until much much later!! I'm now catching up on some blogs and watching Made on MTV. I know I'm going to start to go stir crazy soon, something else will be getting cleaned in the near future :-P
